No-Milk Dandy Latte Recipe

Dandelion and chicory are naturally bitter, which gives them their grounding and detoxifying qualities. In larger amounts, this bitterness can be slightly drying, especially for vata dosha. In this recipe, I’ve balanced these qualities with ghee and tahini to create a creamy, soothing drink ~ and, as always, moderation is key.
Ingredients (for 1 cup):
1 cup hot water
1 tsp roasted dandelion/chicory blend
½ tsp tahini
½ tsp ghee
Pinch of cardamom
Pinch of cinnamon
Optional sweetener of your choice (I love jaggery or maple syrup)
Method:
Pour hot water over the roasted dandelion/chicory blend and let it steep for 3-5 minutes then strain.
Add tahini, ghee, cardamom and cinnamon to a metal jug or blender ~ then add the dandy tea (If using a blender, allow the tea to cool sufficiently before adding ~ once blended, you can gently reheat in a small pot if desired.).
Blend until creamy and frothy.
Add a little sweetener (allow to cool below 37 degrees if adding honey)
Sip slowly and enjoy xox
Tips:
Adjust spices to taste ~ other spices to consider include nutmeg (warming), coriander (cooling) and ginger (warming).
For a vegan option, coconut oil also works well in place of ghee.
